One of Galante’s core beliefs is self-reliance. He forages for almost all of his own proteins and a plethora of other wild edibles, all in a sustainable way. These range from gourmet wild mushrooms (chanterelles, porcini, black trumpets, and more) to diver scallops, lobsters, sea urchin (a personal favorite), abalone, and the elusive white sea bass and hamachi.


He is so good at wild edible foraging, in fact, that he has secured six world records in pole spearfishing. After securing his ingredients, he transforms them into delicious gourmet dishes—a delicate skill for a man of the wild!
